I love trying to find healthy, yet delicious recipes so I thought I'd go ahead and start a thread!

Here's one I just discovered and LOVE!

Homemade Granola:

2 cups rolled oats (make sure they are not the instant kind)
3 tablespoons vegetable oil
2 tablespoons honey
slivered almonds to taste - I think I used about 1/4 cup. You could also use other nuts or add dried fruit.

Mix all ingredients together. If it seems like the mix is too dry you can add more honey.

Cook at 350 degrees for 20 minutes. Make sure to take out the mix and turn it over a few times. I did it once at the 10 minute mark and again at 15.

All I can say is yuuuuuuuuum. It's not nearly as sweet as store-bought granola and adds that great crunch to yogurt. Delish!

Hey that is a good one! And if you look in the section of Wal-Mart where they sell raisons, now they also sell dried cranberries, and banana chips...toss some of those in that granola recipe! MMMMMMMMMMMMM:adore:adore:adore

My only suggestion is to really look at the ingredients for the pre-packaged dry fruit to make sure there aren't any extra sugars added. :thumbsup

Should we do a thread? I'm just worried it will turn into the weekly workout thread...fun at first and then hard to find something useful amid hundreds of posts. With the board we can just skim topics and open recipe posts that we find interesting.

That granola does sound good. Have you eaten it plain? I'm looking for healthy dry snack foods that I can eat in a classroom between meals and access to a microwave.

I just started it so that we could have one main place to post healthy recipes instead of having several different threads all over the place. I can sticky it so that everyone can find it easily, though.

I think the granola is pretty good plain, but a little difficult to eat since it doesn't really clump together like some of the *normal* granolas (not enough fat I suppose). I think if you used a little baggie and took a spoon along it would work fine, though.
