I don't remember how I came up with this dish, but it's a favorite here. You can sub real crab if you've got it or shrimp or scallops.
1 package of imitation crab
2 14 oz cans of diced tomatoes with italian seasoning
chopped onion to taste
minced garlic or garlic powder or both
italian seasoning
cream or fat free evaporated milk
your favorite good for you pasta, cooked, about a pound ( I use the angel hair brand that has the omega 3's or whatever to make it healthy)
Sugar or splenda, optional
Splash of balsamic vinegar, optional
Saute chopped onion in cooking spray or olive oil until tender. Add garlic and cook a minute or two. Dump in both cans of tomatoes, garlic powder to taste (if using) a good teaspoon or two of italian seasoning, salt and pepper if wanted and a teaspoon or two of sugar if wanted ( I use it to cut down on the acid of the tomatoes). Stir and simmer a few minutes to blend the flavors. Dump in crab and heat through. Add a 1/2 cup of cream or evaporated milk, stir to heat. Add a splash of balsamic, stir and serve over your favorite pasta. Serve with a nice salad. Serves about 4.
Yum!! You can add some cayenne pepper if you like it spicy :)
